Memphis Ribs

There is nothing more delicate and messy than a great rack of ribs on the barbeque. Chef Mike has prepared a great recipe for his Memphis Ribs. Enjoy!

What you’ll need:

All natural pork baby back ribs –2 racks, lightly salted and peppered – both sides

Preparation – Dry Rub:

½ TBS Sweet Paprika
½ TBS Chili Powder
½ TBS Kosher Salt
1 Tsp Black Pepper
1 Tsp Garlic Powder
1 Tsp Onion Powder
1 Tsp Dry Thyme
1 Tsp Dry Oregano
1 Tsp Mustard Powder
½ Tsp Ground Coriander
½ Tsp Celery Seed

Mix all ingredients and set aside.

Preparation – Mop Sauce:

In a non-reactive bowl, mix 1 cup of Cider Vinegar, 1 TBS of Kosher Salt, and 2 TBS of Dry Rub – stir until salt dissolves and set aside.

Cooking Instructions:

Place ribs on grill, bone side down over medium, direct  heat.  Cook until that side is golden brown – approximately 30–35 minutes.  Flip the racks and cook meat side down until golden brown, approximately 20-25 minutes.  (Ribs should be able to be pulled apart with fingers)

Remove ribs and generously brush with Mop Sauce.  Season with as much of the Dry Rub as desired, and serve with Harvest Ranch Barbecue Sauce.

Young’s Market began in 1888, as a grocery market in Southern California, and is one of the longest continually operating businesses in the US. They eventually dropped the groceries and focused on their growing beverage business.   • The 2011 Butternut is a wine that lives up to its name. It has round, creamy notes, hints of hazelnut and a finish that doesn’t want to quit. Grapes from the regions of Napa, Santa Lucia and Arroyo Seco in Monterey broaden the flavor profile of Butternut. The Butternut spent 14 months on 100 percent new French Oak.

Chocolate Box Shiraz 2010 (Regularly $19.99) $16.99 Tonight 

  • Rich and ripe, bursting with cherry, floral and, yes, chocolate flavors, this is dark and dense as it drives through the long, deftly framed finish. Shows power, but ultimately comes off as graceful. 90 Points – Wine Spectator

The Rule Cabernet 2010 (Regularly $19.99) $16.99 Tonight 

  • Aromas of black cherries and red raspberries, as well as vanilla and toasty oak. On the palate, the Rule has a silky, round mouth feel and a long finish with mild tannins. Tony Leonardini, of the Whitehall Lane family, is the winemaker.  (Hint: ask Jordy where the grapes are from)

Sebastiani Secolo 2007 (Regularly $34.99) $29.99 Tonight       

  • Rich and creamy, with up-front tiers of toasty oak, supple plum and blackberry that show touches of mineral and tobacco. Full-bodied, ending with a long, persistent finish.

Seared Ahi Recipe

Ahi is one of the most delicate, flavorful fish varieties. At Harvest Ranch and Jonathan’s Market, we sell only the best Sushi Grade Ahi delivered fresh every day. Try out this recipe, and you will be sure to love it! Key is, don’t overcook it!

What you’ll need:

Fresh Ahi steaks
¾ cup Soy Sauce
½ fresh lime – squeezed and juice reserved
½ Tsp Wasabi Powder
2.4 oz jar of Sesame Seeds

Preparation:

1. Mix together Soy Sauce, Wasabi Powder, and lime juice.
2. Dip Ahi steaks into mixture, plate, and then coat with Sesame Seeds

Cooking Instructions:

1. Preheat oven to 400.
2. Heat a heavy pan or griddle on stove top until hot.
3. Add Ahi and cook until you see browning from the side, approximately 1 ½ to 2 minutes.
4. Flip and cook another 1 to 2 minutes.
5. Put steaks on an oven safe platter and place in preheated oven for 5 minutes.

Serve with rice, prepared Wasabi, Soy Sauce, fresh lime wedges and Jicama Sticks.

La Jolla Wine Tasting Selections for 6/7-6/8/13

California is a place of amazing geologic and climatic diversity. Almost every kind of climate, land formation, vegetation, and animal life found anywhere else in the United States can be found in California. It is no wonder then that over one hundred different varietals thrive in one of the many micro-climates found there.

Unlike most European winemakers, Californian winemakers have always been free to plant whatever grape varieties they want. Most people are aware that grapes like Cabernet, Merlot, and Pinot Noir dominate production, but there has been a surge of other varietals like Grenache, Malbec, Cabernet Franc, Petit Syrah, and Zinfandel. Syrah, in particular has proven so successful that it is well on its way to becoming one of the states most important grapes. On Friday we will taste four different and interesting California Blends. They are all very well received wines with fantastic press. It will not be a tasting to miss!

Argentina ranks fifth in worldwide wine production. For most of its history, Argentina has produced rough, simple, and cheap wines. Argentina followed Chile’s path in producing higher quality wines that appealed to other countries, most notably the United States and Great Britain. Argentina’s most interesting wine is Malbec, a red wine that is far more delicious hen made in Argentina than in its native Bordeaux. However, such international varieties as Chardonnay and Cabernet represent the most rapidly growing segment of the Argentinean wine industry and are intended almost exclusively for export.

La Jolla Wine Tasting Selections for 5/31/13 and 6/1/13

On Friday we will taste five Italian wines. In Italy, grapevines grow everywhere; they are Italy’s version of the American lawn. There is simply no region, no district, virtually no cranny of the country that does not produce wine. In short there are over 900,000 vineyards scattered all over the country, producing wine made from over 1000 different varietals. This Friday all four red wines we will taste received 91 Points from Robert Parker’s wine advocate.

The preeminent classic red grape variety is Cabernet. More than any other, Cabernet has vast ranges of quality, of structure, and of maturity. It is astounding how a tight, young, introverted wine can metamorphose into a satiny, rich, complex wine with a few years of aging. Cabernet can range from relatively soft and easy drinking to wines with great structure, intense concentration, and depth.

This Saturday we will be having our international battle of the Cabernet’s. We will pit a Cabernet based wine from Argentina, France, Italy, and the United States against one another.

2010 Pineto Brachetto D’Acqui ($24.99)

  • This Brachetto shows the typical smooth scent of rose, with sweet flavor of crushed strawberry. It can be enjoyed any time of the day, and matches well with desserts, strawberries. It is also an excellent aperitif.

2006 Basilisco Aglianico($39.99)

  • The 2006 Aglianico del Vulture Basilisco is a fabulous wine loaded with varietal character. Juicy dark cherries, plums, spices, leather, earthiness and game come together in this unusually supple, refined wine from Basilisco. The finish is equally composed, with superb integration of aromatics, fruit and structure. This is a highly enjoyable red from Basilicata’s Vulture district. Needless to say, it is highly recommended. Anticipated maturity: 2010-2016.” Antonio Galloni – Wine Advocate 91 Points!

2003 Gualdo del Rennero Merlot ($39.99)

  • Gualdo del Re’s 2003 Il Rennero (100% Merlot aged in barrique) performed very well when tasted blind alongside some of the region’s more famous bottlings. A deep, dark ruby, it presents a compelling mix of blueberry jam, cassis, chocolate and sweet toasted oak, with an engaging, plump personality, notable length on the palate and outstanding freshness considering the vintage. Though not the most complex Italian Merlot, it is sure to please many with its generous, up-front qualities. Antonio Galloni – Wine Advocate 91 Points!

2006 Fontodi Chianti Classico ($39.99)

  • “The Chianti Classico is typically one of the last Chiantis to be bottled, but the 2006 shows all the qualities I encountered when I tasted various lots earlier, prior to final assembly and bottling. It is a big, super-ripe Chianti that captures all of the best qualities of the vintage in its rich fruit and beautifully defined aromatics. This is a serious, structured Chianti that can be enjoyed now, but that also has the stuffing to age gracefully for years. Anticipated maturity: 2009-2016.” Antonio Galloni – Wine Advocate 91 Points!

2004 Cascina Morassino Barbaresco ($59.99)

  • “The estate’s 2004 Barbaresco Ovello presents a much darker color as well as a heavier dose of oak than the Morassino. Ovello is one of the region’s most distinctive sites, so it is a shame to see much of its detail covered by the oak, which also contributes to the harder tannins on the finish. Still, this is beautifully made wine with a dark, spiced personality and plenty of style. Anticipated maturity: 2009-2019.” Antonio Galloni – Wine Advocate 91 Points

John Robert Eppler 2010 Chardonnay ($19.99)

  • Aromas of exotic tropical fruit custard tart and toasty lemon cake with a soft, dry-yet-fruity medium body and a pineapple, kiwi, melon, and earth accented finish. Excellent Burgundian complexity and depth. Will shine with grilled lobster.

Zolo 2010 Reserve {Argentina} ($29.99)

  • “The 2010 Zolo Reserve Cabernet Sauvignon is a worthy follow-up to the 2009. It has a sedate, well-defined bouquet of kirsch, cranberry, raspberry and that gravel note. The palate is full-bodied and well-balanced with earthy ripe black fruit. It is a little broody, but draws you in, and the finish is powerful but wonderfully focused. This is a classy Cabernet. Drink 2013-2020+” Neil Martin – Wine Advocate 93 Points!

Chateau Mongravey 2007 {France} ($36.99)

  • Château Mongravey “amongst the most elegant Margaux wines”… It is not surprising that the “Alliance des Crus Bourgeois” has awarded this exceptional cru the title of “Cru Bourgeois” as of the 2003 vintage. Since 1980, Château Mongravey’s destiny lies in the hands of Régis Bernaleau who, thought and built the remarkable cellar, both aesthetically and technically. Mongravey is a magic wine which matches with nobility the most subtle cuisine. It is a wine which will offer you pure instants of happiness and emotion.

2004 San Leonardo {Italy} ($59.99)

  • Well-focused and fresh, just starting to show some age, with fine-grain tannins and layered flavors of ripe and dried currant, violet, creamy black licorice, dried mint, fragrant tobacco and lots of aromatic ground spices. Lightly chewy on the smoke- and espresso-laced finish. Primarily a Cabernet Sauvignon, with a little Cabernet Franc and Merlot. Drink now through 2019. 5,300 cases made. AN Wine Spectator 93 Points!

Hayfork 2008 {USA} ($69.99)

  • “Some investment in patience will be warranted with this wine, which is 95% Cabernet Sauvignon and 5% Merlot from the Llewelling Ranch at the base of St. Helena’s western hills. Aged in 100% new French oak, the wine is tight and restrained, but bursting with potential. Oodles of minerality, black currants, graphite, tobacco leaf, and spice box are all present in this deep, full-bodied, concentrated and powerful wine. However, the tannins are still present and the wine in need of 4-5 years of cellaring. It should keep for 20-30 years.” Robert Parker Wine Advocate 94 Points!

  • As the largest private vineyard owners in Napa Valley, the Laird family has an incredible tool box for their own label. Add the talents of consulting winemaker Paul Hobbs, and you have an awesome track record of consistency and quality. Their ’09 Jillian’s pops in the glass with wild black fruits, licorice, chocolate and spice coating the palate with every sip. Cab, Syrah, Merlot blend.   93 Points – Wine Spectator

Minassian Young Estate Zinfandel 2010 (Reg. $21.99) ($18.99 Tonight)

  • This is a big, jammy Paso style Zin that’s dry farmed from the old Peachy Canyon Estate.  David Young, owner/winemaker, grew up in Del Mar and La Jolla.

Inspired by the incredible potential offered within this wine region, a diverse group of talented growers and winemakers are producing some of California’s most exciting Pinot Noirs, Chardonnays and other varietals.

2009 Brewer Clifton Chardonnay ($39.99)

  • “The 2009 Chardonnay is an absolutely gorgeous wine. Understated and classy from start to finish, it shows off layers of ripe fruit, subtle oak and spices. There is plenty of acidity to balance an expression of fruit that is generous, but just short of hitting tropical notes. Anticipated maturity: 2011-2018.” Antonio Galloni  - Wine Advocate 92 Points!

2009 Zotovich Chardonnay ($37.99)

  • The Zotovich 2009 Chardonnay is a vivid gold color.  Zesty lemon, pear and quince aromas are underscored by vibrant minerality.  Dry, focused citrus and orchard fruit flavors offer impressive cut and thrust, with dusty mineral and floral qualities gaining strength with air.  It is an elegant, grown-up chardonnay with very good finishing clarity and cut.” Stephen Tanzer 91 Points!

2009 Lincourt Pinot Noir ($24.99)

  • The fruit was hand-harvested and sorted in the vineyard prior to arrival at the winery. The clusters were then carefully de-stemmed to keep the berries intact. Additional hand sorting removed any jack stems before the fruit was transferred to small, stainless steel, open-top fermenters. The juice and skins were cold–soaked for four days prior to fermentation and then gently punched down for 14-24 days. After primary fermentation was complete, the new wine was drained and the skins were gently pressed. The wine was barrel aged in 100% French oak barrels (30% new).

2010 Melville Pinot Noir ($32.99)

  • “Melville’s 2010 Pinot Noir Estate presents an intriguing fabric of sweet candied cherries, rose petals, mint and sweet herbs. This is an especially juicy, yet medium-bodied Pinot built on finesse and elegance. The 2010 is simply gorgeous. Greg Brewer used approximately 33% whole clusters here. Anticipated maturity: 2012-2016.” AGWine Advocate 91 Points!

2008 Bonnacorsi Pinot Noir ($39.99)

  • “Appealing for its up-front plum, wild berry and blueberry fruit that’s supple, complex and layered, elegant and full-bodied, maintaining its fruity, plummy profile on the finish. Drink now through 2016. 125 cases made. –JL” Wine Spectator 91 Points!

On Saturday, we will be featuring several great wines from Spain. We have selected five great wines including a 2007 Alto Moncayo Garnacha which received a 91 point rating from Wine Spectator and 94 point rating from Wine Advocate.

2009 Bodegas Fernando Ramirez Erre Punto ($29.99)

  • The 2009 Erre Punto contains 70% old-vine Viura and 30% old-vine Malvasia. It is slightly more expressive with a bit more depth, concentration, and complexity.
    Bodegas Fernando Remirez de Genuza ranks among the top half-dozen producers in Rioja. Fernando Remirez de Ganuza has been able to accomplish this by melding the best aspects of traditional and contemporary Rioja styles into his own unique expression. White wine is a new addition to the portfolio.” Jay Miller – Wine Advocate 92 Points!

2005 Algueira Riberia Sacra ($29.99)

  • Medium to dark ruby-colored, it offers Pinot Noir-like aromatics with pleanty of spicy red fruits and a touch of oak.  This leads to an elegant wine with incipient complexity, a silky texture sweet red berry flavors, and good length.  The wine can be enjoyed now and over the next 6 years (02/08) Robert Parker – Wine Advocate 90 Points!

2005 Martinet Bru Priorat ($39.99)

  • “The 2005 Martinet Bru is purple-colored with an excellent nose of cedar, smoke, mineral, black cherry, and black currant. Structured, with enough tannin for 5-7 years of further evolution, this intense, lengthy wine will require considerable patience. The 2005 will drink best from 2008 -2015.” Jay Miller – Wine Advocate 91+ Points

2006 Quinta Vale D. Maria

  • “The 2006 Quinta Vale D. Maria has a beautiful nose, floral with blue fruit and vanilla nuances. This aromatic wine has good structure and is one of the nicer 2006’s. It will be approachable early but could use some time.” Neal Martin – Wine Advocate 92 Points!

2007 Alto Moncayo Garnacha ($49.99)

  • “Rich yet supple, this expressive red wraps chocolate and cola notes around a core of ripe cherry and berry fruit. There’s a firm but lively structure and a warm, spicy finish. Drink now through 2014. 600 cases imported. TM – Wine Spectator 91 Points! / Wine Advocate 94 Points!
